Equipment

  • mixing bowl
  • whisk

Ingredients

Dry Ingredients

  • 1 cup all-purpose flour for structure
  • ¼ teaspoon salt to enhance flavor

Wet Ingredients

  • 2 large eggs for binding and elasticity
  • ½ cup milk for moisture and smooth texture
  • ½ cup water to thin the batter
  • 2 tablespoons butter, melted for richness and softness

Instructions

Preparation

  • In a mixing bowl, whisk together 1 cup flour and 2 eggs until combined.
  • Gradually add ½ cup milk and ½ cup water while whisking to create a smooth, lump-free batter.
  • Add ¼ teaspoon salt and 2 tablespoons melted butter, then mix well.
  • Let the batter rest for 10–15 minutes to improve texture.

Cooking

  • Heat a lightly greased non-stick pan over medium heat.
  • Pour about ¼ cup batter into the pan and quickly swirl to coat the surface evenly.
  • Cook for 1–2 minutes until the bottom is lightly golden, then flip.
  • Cook the other side for 30–60 seconds until done.
  • Repeat with remaining batter, stacking crêpes on a plate.

Notes

Ensure the batter is thin for authentic Basic Crêpes texture. Letting the batter rest helps achieve softer crêpes. Use a non-stick pan to prevent sticking. Stack crêpes with wax paper between layers for easy storage. Store in the refrigerator for up to 2 days or freeze for up to 2 months.
