Fish
- 3 filets mahi mahi
- 2 tablespoon olive oil
Blackening Seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon thyme
- ¼ teaspoon cayenne
Mango Salsa
- 1 cup cherry tomatoes
- ½ cup mango
- 1 medium avocado
- ¼ cup cilantro
- 1 juice of lime
Preparation
Chop up tomatoes, avocado, mango, and cilantro and add to a bowl and mix together with the lime juice and refrigerate.
Add all blackening spices together and mix.
Pat fish dry and add seasoning to all sides of the fish.
Add olive oil to a pan over medium/high heat and once heated add fish to the pan. Cook for 4 minutes on one side then flip and cook for another 4 minutes.
Plate the fish and top with the salsa.
