  • 2 large eggs
  • 0.5 cup whole milk room temperature
  • 0.25 cup olive oil plus extra for brushing
  • 2 tablespoon plain Greek yogurt or sour cream
  • 1.5 cups all-purpose flour spooned and leveled
  • 1.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon garlic powder
  • 0.75 cup shredded low-moisture mozzarella
  • 0.33 cup sun-dried tomatoes in oil, drained and chopped
  • 0.25 cup fresh basil chopped
  • 1 pinch black pepper or red pepper flakes optional

Baking Instructions

  • Heat oven to 350°F (175°C). Grease and line a 9×5 inch loaf pan with parchment.
  • Whisk eggs, milk, olive oil, and yogurt until smooth and slightly frothy.
  • In another bowl, combine flour, baking powder, salt, and garlic powder.
  • Add dry to wet and stir until just combined. Batter will be thick.
  • Fold in mozzarella, sun-dried tomatoes, basil, and optional pepper or flakes.
  • Spread into pan, smooth top, and tap pan once to release air.
  • Bake for 45 to 55 minutes until golden and a toothpick shows moist crumbs.
  • Tent with foil if browning early. Cool 10 minutes in pan, then 30 minutes on a rack.
  • Slice and serve warm. Brush top lightly with olive oil if desired.
