- 2 large eggs
- 0.5 cup whole milk room temperature
- 0.25 cup olive oil plus extra for brushing
- 2 tablespoon plain Greek yogurt or sour cream
- 1.5 cups all-purpose flour spooned and leveled
- 1.5 teaspoon baking powder
- 0.5 teaspoon salt
- 0.25 teaspoon garlic powder
- 0.75 cup shredded low-moisture mozzarella
- 0.33 cup sun-dried tomatoes in oil, drained and chopped
- 0.25 cup fresh basil chopped
- 1 pinch black pepper or red pepper flakes optional
Baking Instructions
Heat oven to 350°F (175°C). Grease and line a 9×5 inch loaf pan with parchment.
Whisk eggs, milk, olive oil, and yogurt until smooth and slightly frothy.
In another bowl, combine flour, baking powder, salt, and garlic powder.
Add dry to wet and stir until just combined. Batter will be thick.
Fold in mozzarella, sun-dried tomatoes, basil, and optional pepper or flakes.
Spread into pan, smooth top, and tap pan once to release air.
Bake for 45 to 55 minutes until golden and a toothpick shows moist crumbs.
Tent with foil if browning early. Cool 10 minutes in pan, then 30 minutes on a rack.
Slice and serve warm. Brush top lightly with olive oil if desired.
