Brownie Base

  • 1 box brownie mix plus eggs, oil, and water as required on package

Cheesecake Filling

  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • ¼ cup sour cream
  • ¼ cup heavy cream
  • ½ cup caramel sauce plus extra for topping
  • 1 cup whipped cream for decoration
  • ¼ cup chocolate chips for garnish

Preparation

  • Preheat oven to 350°F (175°C). Prepare the brownie mix according to package instructions, pour into a greased 9-inch pan, and bake. Allow the brownie base to cool completely.
  • Reduce oven temperature to 325°F (160°C). In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
  • Add vanilla extract, then mix in eggs one at a time, blending well after each addition.
  • Stir in sour cream and heavy cream until the mixture is fully combined and smooth.
  • Pour the cheesecake batter over the cooled brownie base and spread evenly.
  • Drizzle caramel sauce over the top and use a knife or skewer to swirl it into the batter.
  • Bake for 50–60 minutes, until edges are set and the center is slightly jiggly.
  • Turn off the oven and let the cheesecake cool inside with the door slightly open.
  • Refrigerate for at least 4 hours or overnight until fully set.
  • Before serving, drizzle with additional caramel sauce and top with whipped cream and chocolate chips.

Notes

Ensure cream cheese is at room temperature for a smooth batter. Avoid overmixing to prevent cracks in the cheesecake. Cool gradually in the oven to minimize surface cracking. Chill overnight for best texture and flavor. Use a warm knife for clean slices when serving.
