Ingredients
  

  • 1 box carrot cake mix
  • 8 ounces cream cheese, softened
  • 12 ounces white candy melts
  • 4 ounces orange candy melts
  • chopped pecans or walnuts Optional
  • sprinkles for decoration Optional

Instructions
 

  • Preheat the oven to 350°F and spread the dry carrot cake mix on a baking sheet.
  • Bake the cake mix for about 5 minutes to heat treat it and make it safe to eat.
  • Allow the cake mix to cool completely.
  • In a mixing bowl combine the cooled cake mix and softened cream cheese.
  • Mix until a thick smooth dough forms.
  • Refrigerate the mixture for about 1 hour until firm.
  • Scoop small portions and roll them into 1 inch balls.
  • Place the balls on a parchment lined tray and chill for 20 minutes.
  • Melt the white candy melts in a microwave safe bowl in short intervals stirring until smooth.
  • Dip each carrot cake ball into the melted candy coating and place back on the parchment lined tray.
  • Melt the orange candy melts and drizzle over the coated bites.
  • Allow the coating to set completely before serving.

Notes

Store the cheesecake bites in an airtight container in the fridge. These bites can be decorated with chopped nuts or sprinkles for extra flair. Make sure to allow the coating to set before consuming for the best texture.
