Ingredients
  

  • 4 medium zucchinis
  • 1 cup shredded mozzarella cheese
  • ½ cup ricotta cheese
  • 1 cup cooked ground meat (beef, chicken, or turkey)
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese
  • Fresh parsley, for garnish (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cut the zucchinis in half lengthwise. Scoop out the center using a spoon, leaving about ¼ inch of flesh to create a boat.
  • Lightly sprinkle salt and pepper inside the hollowed zucchinis.
  • In a bowl, combine the mozzarella cheese, ricotta cheese, cooked ground meat, marinara sauce, Italian seasoning, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Spoon the cheese mixture into each zucchini boat, packing it in generously.
  • Sprinkle grated Parmesan cheese over the stuffed zucchinis for added flavor.
  • Place the stuffed zucchinis on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
  • Remove from the oven and let cool slightly. Garnish with fresh parsley if desired.
