Chocolate Covered Strawberries

Ingredients
  

  • 1 pound fresh strawberries
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Instructions
 

Preparation

  • Line a baking sheet with parchment paper.
  • Wash the strawberries and dry them completely.
  • Fill a small saucepan with 1 inch of water and bring to a simmer. Combine the chocolate chips and coconut oil in a medium heatproof bowl and set over the saucepan to melt.
  • Holding each strawberry by its leaves, dip it into the melted chocolate and place on the baking sheet.
  • Chill in the refrigerator for 30 minutes, or until firm.
  • Store any leftovers in an airtight container in the refrigerator for up to 1 day.

Notes

You can also melt the chocolate in the microwave. Microwave for 1 to 3 minutes, stirring every 20 seconds, until smooth.
