Ingredients
  

Dressing

  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon honey optional
  • Salt to taste
  • fresh ground black pepper to taste

Salad

  • 1 long English cucumber or 3 Persian cucumbers, chopped small
  • 1 pound tomatoes chopped small
  • ¼ large sweet onion chopped small, about 1 cup
  • 1 cup fresh parsley leaves chopped

Instructions
 

Preparation

  • Make dressing: Whisk the vinegar (or lemon juice), olive oil, mustard, and honey until blended. Season with salt and pepper.
  • Make salad: Add chopped cucumbers, tomatoes, onion, and parsley to a large bowl. Pour the dressing over and toss. Serve or store in the fridge for up to 3 days.

Notes

Use sweeter onions like Walla Walla or Vidalia for best flavor. For a vegan option, substitute honey for maple syrup or agave nectar.
