Ingredients
  

Vegetables

  • 1 red bell pepper diced
  • 1 cup carrots shredded, from the bag
  • 0.5 head red cabbage chopped
  • 1 can chickpeas rinsed and drained
  • 0.5 cup cilantro finely chopped
  • 0.25 cup green onion finely chopped
  • 0.5 jalapeño seeded and diced
  • 0.25 cup roasted cashews

Dressing

  • 2 tablespoons peanut butter
  • 0.5 tablespoon ginger freshly grated
  • 1 clove garlic minced
  • 1 teaspoon apple cider vinegar or rice vinegar
  • 1 teaspoon yellow curry powder
  • 0.25 teaspoon red cayenne pepper
  • 0.25 teaspoon ground turmeric
  • salt to taste
  • black pepper freshly ground, to taste
  • 2 tablespoons water warm, to thin dressing

Instructions
 

Preparation

  • In a large mixing bowl, combine red bell pepper, carrots, red cabbage, chickpeas, cilantro, green onion, and jalapeño.
  • In a separate bowl, mix peanut butter, ginger, garlic, apple cider vinegar, yellow curry powder, red cayenne pepper, ground turmeric, salt, and black pepper. Add water to thin the dressing.
  • Drizzle the dressing over the salad and toss to combine.
  • Top with roasted cashews and extra cilantro before serving.
