Ingredients
  

Steak

  • 1.25 pounds flank steak
  • 0.33 cup olive oil
  • 1 unit lime zested and juiced
  • 1 tablespoon minced garlic
  • 0.5 cup minced cilantro
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper

Bowl

  • 2 cups cooked white rice
  • 1 can black beans drained and rinsed
  • 1 cup corn
  • 1 unit avocado
  • 0.5 unit red onion sliced
  • 1 cup cherry tomatoes halved
  • 1 batch cilantro lime crema click for recipe

Instructions
 

Preparation

  • Whisk together all ingredients for the steak marinade: olive oil, juice and zest of a lime, garlic, cilantro, salt and pepper.
  • Add the steak to a shallow dish and pour the marinade on top. Let marinate in the fridge for at least 1 hour.
  • Heat a cast iron pan to medium high and place steak on. Cook for 3-4 minutes per side until desired internal temperature is reached.
  • Let the steak rest for 10 minutes, then slice into strips or cubes.
  • Assemble your bowls with rice, black beans, corn, avocado, steak, and top with cilantro lime crema.
  • Optionally, add in some chopped lettuce, sautéed bell peppers and onions.

Notes

Meat loves salt, so don't skimp on the salt from the marinade!
