Ingredients
  

  • 1 medium yellow onion
  • 3 cloves garlic
  • 2 cans kidney beans about 15-ounce each
  • 2 tablespoons olive oil
  • 3 tablespoons tomato paste
  • 2 pounds ground beef preferably 80 to 85% lean
  • 2 teaspoons kosher salt plus more as needed
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon unsweetened cocoa powder
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
  • ¼ teaspoon cayenne pepper optional
  • 1 can fire-roasted crushed tomatoes 28-ounce
  • 1 can low-sodium beef or chicken broth about 14.5-ounce, scant 2 cups
  • 1 teaspoon apple cider vinegar

Instructions
 

  • Dice the onion and mince the garlic. Drain and rinse the kidney beans.
  • Heat olive oil in a Dutch oven over medium heat. Add onion and cook until softened. Add garlic and cook until fragrant. Stir in tomato paste and cook until darkened in color.
  • Add ground beef, salt, and pepper. Cook until browned and cooked through. Stir in spices and cook for 1 minute more.
  • Add beans, crushed tomatoes, and broth. Stir to combine. Bring to a boil, then reduce heat and simmer until thickened.
  • Remove from heat, add vinegar and season to taste. Serve with desired toppings.

Notes

Serve with toppings like sour cream, cheddar cheese, or diced avocado for added flavor.
