  • 1 small onion finely chopped

Oils and Fats

  • 1 tablespoon olive oil
  • 3 tablespoons unsalted butter melted

Dairy

  • 1 cup whole milk
  • ½ cup heavy cream
  • ¼ cup Parmesan cheese

Spices and Seasonings

  • ¾ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon dried thyme

Other

  • 2 pounds spinach rinsed, drained, and coarsely chopped
  • 2 tablespoons all-purpose flour
  • 1 cup breadcrumbs

Instructions
 

Cooking Steps

  • Preheat the oven to 375 F and butter a gratin dish.
  • Sauté the onion in the olive oil for 5 minutes in a medium saucepan set over medium heat. Sprinkle the flour over the onions and continue sautéing for 30 seconds.
  • Add the salt, pepper, dried thyme, and spinach to the pan and stir until combined. Cover and lower the heat to allow the spinach to wilt for 3 minutes.
  • Stir in the milk and heavy cream, then transfer the mixture to the buttered gratin dish. Mix melted butter, breadcrumbs, and Parmesan cheese together and sprinkle over the gratin.
  • Bake in the preheated oven for 15 to 20 minutes until hot and bubbly and the breadcrumbs turn golden brown.

Notes

You can prepare the gratin dish in advance and refrigerate for up to two days. Add 10 minutes to cooking time if baking from cold.
