Biscuit Mix
- 1 box Cheddar Bay Biscuit Mix
Seasonings
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- ¼ teaspoon Paprika
- ½ teaspoon Onion powder
- to taste Salt and pepper
Crab Mixture
- 1 pound Lump crab meat
- ½ cup Mayonnaise
- 1 tablespoon Dijon mustard
- ½ tube Ritz crackers, crushed finely
- 1 cup Parmesan cheese, grated
Finishing Touch
- 2 tablespoon Melted butter
- 1 teaspoon Lemon juice
Preparation
Heat the oven to 375 degrees, and spray the sections of a muffin tin well with nonstick cooking spray.
Mix together the biscuit mix according to the instructions on the package, and add in the Italian seasoning and minced garlic.
In a bowl, stir together the crab meat, paprika, mayonnaise, dijon mustard, onion powder, parmesan cheese, cracker crumbs and salt and pepper to taste.
Add a bit of the biscuit dough to the muffin tin, and form it into the shape of a bowl.
Spoon a scoop of the crab mix into the bowl part of the biscuit.
Cover the filling with a little more of the biscuit mixture.
Bake for 12-15 minutes.
While the biscuits are baking, in a small bowl mix together a mixture of melted butter and lemon juice.
Once the biscuits are out of the oven, immediately brush them with the lemon butter.
Serve the biscuits warm.
