Ingredients
  

  • 100 g light brown sugar
  • 100 ml fresh orange juice
  • 250 g fresh or frozen cranberries
  • 1 clementine or small orange finely grated zest optional

Method

  • Bring the sugar and orange juice to the boil in a large saucepan.
  • Stir in the cranberries and zest, if using, and simmer for 5 minutes or until tender but holding their shape.
  • Refrigerate until needed; it will thicken as it cools.

Notes

For best results, make this cranberry sauce a few days in advance to let the flavors mingle. Can be frozen for up to 3 months and defrosted in the fridge for 24 hours before serving.
