Creamy Garlic Shrimp Pasta

Ingredients
  

Pasta and Shrimp

  • 12 ounces penne pasta
  • 1 pound large shrimp shelled and deveined
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 3 ounces sun-dried tomatoes drained
  • 4 cloves garlic minced
  • 2 cups half n half
  • ½ cup chicken stock or pasta water
  • ¼ teaspoon red pepper flakes optional
  • 1 cup mozzarella cheese shredded
  • 1 cup parmesan cheese grated
  • 1 tablespoon fresh chopped basil or 1 teaspoon dried
  • more salt and pepper to taste

Cooking Instructions

  • In a large pot cook pasta to al dente according to the package directions. Strain and reserve ½ cup liquid if you’re not using chicken stock.
  • In a small bowl toss the shelled and deveined shrimp with salt, pepper, garlic powder, and smoked paprika until well coated.
  • Heat a large skillet on medium-high heat add olive oil, add in shrimp cook for 2 minutes then flip and cook another 2 minutes. Remove cooked shrimp and set aside.
  • Lower the heat a bit and add in the sun-dried tomatoes and garlic and sauté for 1 minute.
  • Add in the half n half, chicken stock (or pasta water), and red pepper flakes to the skillet and bring to a low simmer for 4-5 minutes or until sauce is thickened. Turn off the heat and add in the mozzarella and parmesan cheese and whisk until melted.
  • Fold in the cooked pasta fresh basil and shrimp. Serve!

Notes

You can use whatever pasta you have on hand. I use large 31/40 shrimp for this recipe. You can make your own half n half by using ½ heavy whipping cream and ½ milk. The sauce will thicken up as it cools, but if you would like it thinner just add a couple of tablespoons of stock or water at a time.
