- 8 ounces Mushrooms (sliced)
- ½ cup Sun-Dried Tomatoes (oil-packed or rehydrated)
- 2 cups Spinach (fresh)
- 1 medium Onion (chopped)
- 3 cloves Garlic (minced)
Sauce Components
- 1 cup Vegetable or Chicken Broth ensure gluten-free if required
- 1 cup Heavy Cream or half-and-half
- ½ cup Parmesan Cheese (grated)
- ¼ teaspoon Red Pepper Flakes optional
Cooking Instructions
Bring a large pot of salted water to a boil. Add 8 ounces of your chosen pasta and cook according to the package instructions, usually around 8-10 minutes.
While the pasta cooks, heat a large skillet over medium heat. Add a splash of olive oil. Once hot, add 1 medium chopped onion and sauté for about 3-4 minutes until translucent.
Stir in 3 cloves of minced garlic and 8 ounces of sliced mushrooms. Cook for an additional 4-5 minutes, or until the mushrooms are tender.
Add in ½ cup of sun-dried tomatoes and 2 cups of fresh spinach. Sauté until the spinach wilts, about 2 minutes.
Pour in 1 cup of vegetable or chicken broth and 1 cup of heavy cream. Bring to a gentle simmer and let cook for about 3-4 minutes.
Drain the pasta and add it directly to the skillet. Toss everything together over low heat for about 2 minutes.
Stir in ½ cup of grated Parmesan cheese and ¼ teaspoon of red pepper flakes. Mix until the cheese is melted and the sauce is creamy.
Turn off the heat and let it sit for a minute before serving. Garnish with additional Parmesan cheese and fresh herbs if desired.
