Ingredients
  

Chicken Ingredients

  • 4 large boneless skinless chicken breasts
  • 2 cups flour
  • 4 teaspoon salt
  • 4 teaspoon black pepper
  • 3 tablespoon ground ginger
  • 1 tablespoon freshly ground nutmeg
  • 2 teaspoon ground thyme
  • 2 teaspoon ground sage
  • 1 teaspoon cayenne pepper
  • 2 tablespoon paprika
  • 4 large eggs
  • 8 tablespoon water
  • 2 tablespoon olive oil
  • 3-4 cloves minced garlic
  • 1 cup honey
  • ¼ cup low sodium soy sauce
  • 1 teaspoon ground black pepper
  • canola oil for frying

Instructions
 

Preparation Steps

  • Place the chicken breasts between 2 sheets of plastic wrap and using a meat mallet, pound the meat to an even ½ inch thickness.
  • Sift together the flour, salt, black pepper, ground ginger, nutmeg, thyme, sage paprika and cayenne pepper. Store ½ for later use.
  • Make an egg wash by whisking together the eggs and water.
  • Season the chicken breasts with salt and pepper, then dip the meat in the flour and spice mixture, then in the egg wash and finally back into the flour mixture.

Cooking the Chicken (Fried)

  • Heat a skillet with about a half inch of canola oil to a temperature just below medium heat.
  • Fry the chicken gently for about 4 or 5 minutes per side until golden brown and crispy.
  • Drain on a wire rack for a couple of minutes before dipping into the Honey Garlic Sauce.
  • Make the Honey Garlic Sauce with olive oil, minced garlic, honey, soy sauce, and black pepper in a saucepan.
  • Simmer for 5-10 minutes, cool slightly before serving.

Cooking the Chicken (Oven Baked)

  • Preheat a baking sheet in a 425F degree oven and lightly coat with canola oil.
  • Dip chicken pieces as instructed and lay them out on a floured cutting board.
  • Transfer chicken to the hot baking pan, ensuring pieces do not touch.
  • Lightly spray the tops with vegetable oil; bake for 15 minutes, then flip and bake for another 10-15 minutes until crispy.
  • Dip the baked pieces in the sauce and serve immediately.

Notes

For a gluten free option, substitute rice flour for the white flour.
