Ingredients
  

  • 1 can (15 oz) chickpeas drained and rinsed
  • ¼ cup fresh lemon juice
  • ¼ cup tahini
  • 1 small garlic clove minced
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • 3 tablespoons ice cold water

Instructions
 

  • Drain and rinse the chickpeas thoroughly. Optionally remove the skins for extra smooth texture.
  • Blend tahini and lemon juice until creamy and whipped.
  • Add garlic, salt, and cumin and blend again.
  • Add half the chickpeas and blend, then add the rest.
  • Slowly add ice-cold water while blending until smooth and fluffy.
  • Add olive oil and blend until silky.
  • Taste and adjust seasoning.
  • Serve with olive oil and toppings.

Notes

Use ice-cold water to create a fluffy texture. Blend tahini and lemon first for best consistency. Peel chickpeas for ultra smooth hummus.
