Ingredients
  

Boursin Cheese

  • 2 packages Boursin 5.3 oz packages

Bruschetta Mixture

  • 1.5 cups chopped de-seeded tomatoes vine-ripened or Roma tomatoes recommended
  • 0.25 cups fresh basil leaves packed, chopped, plus more for garnish
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic pressed or very finely minced
  • salt
  • pepper
  • balsamic reduction Alessi brand recommended
  • crackers or crostini see notes for recipe

Instructions
 

Preparation

  • Let the Boursin packages sit on the counter for 15-20 minutes to soften slightly while you prepare the rest of the dish.
  • To a small mixing bowl add the chopped tomatoes, basil, extra virgin olive oil, balsamic vinegar, garlic, salt, and pepper then stir to combine. Let the mixture sit for 5 minutes which will give the salt time to draw the juices out of the tomatoes.
  • Add the slightly softened Boursin cheese to an 8-9" shallow serving dish or pie pan then use the back of a spoon to spread it into an even layer.
  • Spoon the bruschetta mixture over the top, leaving all the juices in the bottom of the mixing bowl (drizzle the juices over lettuce or sliced cucumbers as a salad dressing).
  • Drizzle the top of the dip with balsamic reduction then garnish with extra fresh basil leaves. Serve immediately with crackers or crostini and a spreading knife.

Notes

You can use any flavor of Boursin you like, including the dairy free version of Boursin. To make ahead: spread the Boursin into the bottom of a serving dish and prepare the bruschetta up to 24 hours ahead of time. Cover then store separately in the refrigerator. Spoon the bruschetta mixture over the Boursin just prior to serving. To make crostini: slice a gluten free baguette (or regular baguette if you don’t need to eat GF) into ¼" slices then arrange on a silpat or parchment paper-lined half sheet pan. Brush both sides with extra virgin olive oil then season lightly with salt and pepper. Bake at 350 degrees for 8-12 minutes, or until the crostini are golden brown, rotating the baking pan and flipping the crostini over halfway through.
