  • Prepare pan: Line a baking sheet with a silicone baking mat and place it in the freezer.
  • Combine base: In a bowl, whisk frozen yogurt, honey, vanilla, salt, and lemon juice until smooth, about 2 minutes.
  • Spread mixture: Spoon the mixture onto the mat and spread to a ¼‑inch thickness; this takes about 5 minutes.
  • Add berries: Scatter mixed berries evenly over the surface; press lightly to embed.
  • Freeze: Return the sheet to the freezer and freeze for 2 hours until firm.
  • Break and serve: Remove from freezer, break into pieces, drizzle optional honey, and enjoy.

Notes

For extra crunch, add toasted almond slivers on top before freezing. Swap honey with maple syrup for a vegan version. Freeze the entire bark and break pieces as you serve. Double all ingredients for a larger sheet; keep thickness consistent. If bark is too soft, increase freezer time or lower freezer temperature.
