For the Chicken

  • 1 lb Chicken Breasts (boneless, skinless)
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika

For the Vegetables

  • 3 cups Mixed Vegetables (bell peppers, onions, zucchini)

For the Dressing

  • 1 cup Greek Yogurt Can substitute with sour cream or dairy-free yogurt
  • 1 packet Ranch Seasoning Mix
  • ¼ cup Fresh Herbs (parsley, dill) Chopped

For the Pitas

  • 4 pieces Pitas Soft or slightly toasted

How to Make Easy Sheet Pan Chicken Pitas

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the boneless, skinless chicken breasts with olive oil, salt, pepper, garlic powder, and paprika.
  • Spread the chicken and mixed vegetables evenly on a large sheet pan.
  • Place the sheet pan in the oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • While the chicken and veggies are roasting, mix Greek yogurt with ranch seasoning and chopped fresh herbs in a small bowl.
  • In the last 5 minutes of baking, place the pitas in the oven to warm through.
  • Once everything is ready, slice the chicken and serve it in warm pitas, topped with roasted vegetables and a generous drizzle of your herby ranch dressing.

Notes

Allow the chicken to rest for 3 to 5 minutes after baking for better moisture retention. Customize the vegetables based on what's available or your family's preferences.
