Ingredients
  

Rice and Vegetables

  • ¾ cup uncooked rice You can use jasmine rice or substitute with other varieties.
  • 1 tablespoon olive oil
  • ½ medium onion chopped
  • 1.5 pounds lean ground beef
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped

Liquids and Seasoning

  • 1 can tomato sauce 13.5 fluid ounce
  • 1 can fire-roasted diced tomatoes 28 fluid ounce, with juices
  • 4 cups chicken broth
  • ¼ teaspoon Italian seasoning
  • 1 teaspoon paprika
  • Salt & pepper to taste

Cooking Instructions

  • Start by cooking the rice according to package directions. If you have already cooked rice on hand, save it for later in the recipe.
  • While the rice is cooking, add the oil and onion to a large soup pot and sauté for 5-7 minutes. You can chop the peppers while the onions are cooking.
  • Add the ground beef to the pot and cook for 5 minutes, using a spoon to stir/break up the beef as it cooks.
  • Stir in the garlic and cook for about a minute.
  • Add in the peppers, tomato sauce, diced tomatoes, chicken broth, Italian seasoning, and paprika. Bring to a gentle boil, then reduce heat and let it simmer for 15 minutes.
  • Add the cooked rice to the pot and continue cooking the soup for another 10 minutes, seasoning as needed with salt & pepper.

Notes

For freezing and leftovers, do not add the rice until reheating to avoid mushiness. This soup can also be made in a slow cooker by browning the beef first, transferring everything except for the rice and seasoning, and cooking on low for 6-8 hours or high for 3-4 hours.
