Ingredients
  

Cucumber and Yogurt Base

  • ¾ pieces English cucumber, partially peeled striped
  • 1 teaspoon kosher salt divided
  • 4 to 5 cloves garlic, peeled and finely grated or minced start with 1 to 2 for less garlic
  • 1 teaspoon white vinegar
  • 1 tablespoon Greek Extra Virgin Olive Oil such as Early Harvest
  • 2 cups plain Greek yogurt
  • ¼ teaspoon ground white pepper
  • 1 handful chopped fresh dill or mint optional

For Serving

  • Warm pita bread for serving
  • Sliced vegetables for serving

Instructions
 

Preparation

  • Grate the cucumbers using a box grater or small food processor. Toss with ½ teaspoon kosher salt and squeeze dry in cheesecloth.
  • In a large mixing bowl, combine garlic, remaining ½ teaspoon salt, white vinegar, and olive oil.
  • Add grated cucumber to the bowl and stir in yogurt, a pinch of white pepper, and fresh herbs if using. Mix well.
  • Cover and refrigerate for 30 minutes to 2 hours for best texture and flavor.
  • When ready to serve, stir, transfer to a serving bowl, and drizzle with extra virgin olive oil if desired.

Notes

Best to store in a tightly-covered glass container in the fridge, use within 4 days. Adjust garlic to taste as this dip can be very garlicky.
