Ingredients
  

For the dough

  • ½ cup whole milk lightly warmed
  • 2 tablespoons granulated sugar
  • 2 ¼ teaspoons active dry yeast or instant yeast
  • 4 tablespoons unsalted butter melted and lightly cooled
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • 2 cups all purpose flour
  • 1 teaspoon kosher salt

For the filling

  • 4 heads garlic tops cut off to expose the individual cloves
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter softened to room temperature
  • ¼ cup chopped parsley
  • ½ teaspoon kosher salt and freshly ground black pepper
  • 2 cups shredded mozzarella cheese preferably thick-cut

For the topping

  • 2 tablespoons butter melted
  • 1 tablespoon chopped parsley
  • 1 tablespoon freshly grated parmesan cheese plus more for garnish
  • 1–2 teaspoons minced garlic

Instructions
 

For the dough

  • Warm the milk to around 110°F. Sprinkle sugar and yeast over it and let it sit for 7-10 minutes.
  • Add melted butter, egg, egg yolk, flour, and salt. Knead the dough until smooth.
  • Shape the dough into a ball, place it in a greased bowl, and let it rise for 1-2 hours or until doubled in size.
  • Preheat the oven to 400°F. Roast the garlic for 30-40 minutes until golden brown.
  • After the dough has risen, punch it down and roll it into a rectangle about 13x8 inches.

For the filling

  • Blend roasted garlic in a food processor into a paste. Spread softened butter on the dough.
  • Add roasted garlic paste, chopped parsley, salt, pepper, and sprinkle shredded cheese over the dough.
  • Roll the dough into a tight log and pin down the seam.
  • Cut the log into 9 pieces and place in a lined baking dish.
  • Let it rise again for 1-2 hours or until puffy.
  • Preheat oven to 350°F and bake rolls for 30-35 minutes until golden brown.
  • Combine melted butter, parsley, parmesan, and minced garlic for the topping.
  • Brush the baked rolls with the topping and serve warm.
