  • 6 cups fresh mixed greens washed and thoroughly dried
  • 2 cups fresh strawberries hulled and sliced
  • 1 cup crumbled feta cheese
  • ½ cup pecans roughly chopped
  • ¼ cup red onion thinly sliced
  • ¼ cup fresh mint leaves chopped
  • ¼ cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon salt
  • teaspoon black pepper

Preparation Steps

  • Preheat oven to 350°F. Spread pecans in single layer on baking sheet and toast for 5-7 minutes until fragrant and lightly browned. Remove immediately to cool.
  • In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until emulsified and smooth.
  • Hull and slice strawberries, thinly slice red onion, and chop fresh mint leaves.
  • In a large salad bowl, arrange mixed greens. Top with strawberries, toasted pecans, red onion, crumbled feta cheese, and chopped mint.
  • Drizzle with dressing and toss gently to combine. Serve immediately.

Notes

For added sweetness, consider using ripe strawberries. This salad is best served fresh but can be stored in the refrigerator for a few hours before serving. Feel free to substitute walnuts for pecans if desired.
