Ingredients
  

  • 4 large lemons Fresh, organic lemons yield the best flavor.
  • 2 cups granulated sugar Feel free to adjust based on taste preference.
  • 1 cup water
  • ½ teaspoon vanilla extract Optional for added flavor.

Instructions
 

  • Wash and dry the lemons. Zest the lemons, then juice them, discarding the seeds.
  • In a pot, combine the lemon juice, zest, sugar, and water. Stir until the sugar dissolves.
  • Bring the mixture to a boil over medium heat. Reduce heat and simmer for about 30-40 minutes, stirring occasionally, until it thickens.
  • To check if it’s ready, place a small amount on a cold plate. If it gels, it’s done. If not, continue cooking for a few more minutes.
  • Remove from heat and let it cool slightly before pouring into sterilized jars. Seal tightly and let cool completely.

Notes

Always use sterilized jars for storage to prevent spoilage. For a unique twist, add herbs like thyme or basil while cooking. Remember that the jam will thicken more as it cools.
