Ingredients
  

  • 500 g lamb shoulder cut into chunks Use lamb shoulder for most tender result
  • 2 tablespoons oil
  • 2 large onions finely chopped Cook until golden for deep flavor
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 medium tomatoes finely chopped
  • ½ cup yogurt Mix slowly to avoid curdling
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon chili powder
  • 1 teaspoon garam masala
  • 1 teaspoon salt
  • 2 cups water
  • 2 tablespoons fresh cilantro chopped For garnish

Instructions
 

  • Prepare all ingredients by chopping onions, tomatoes, garlic, and cutting lamb into equal pieces
  • Heat oil in a large pot and sauté onions until golden brown
  • Add garlic and ginger, cooking until fragrant
  • Stir in turmeric, cumin, coriander, and chili powder, letting the spices bloom
  • Add tomatoes and cook until they break down into a thick paste
  • Lower heat and mix in yogurt slowly to avoid curdling
  • Add lamb pieces and coat them well with the spice mixture
  • Pour in water, cover, and simmer on low heat for 60–90 minutes until lamb is tender
  • Sprinkle garam masala and simmer for a few more minutes
  • Garnish with fresh cilantro and serve hot

Notes

Always let the curry rest before serving to enhance taste.
