Ingredients
  

Blueberry Sauce

  • 1 teaspoon cornstarch
  • 2 teaspoons lemon juice or water
  • 1 cup fresh or frozen blueberries do not thaw
  • 2 teaspoons granulated sugar

Shortbread Crust

  • ½ cup unsalted butter melted
  • ¼ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • 1 cup all-purpose flour spooned & leveled

Filling

  • 1 can (14 ounce weight) full-fat sweetened condensed milk
  • 6 Tablespoons lemon juice about 2 lemons
  • 1 teaspoon lemon zest 1 lemon
  • 1 large egg yolk

Optional Garnishes

  • lemon slices
  • blueberries
  • leftover blueberry sauce
  • whipped cream

  • Mix cornstarch and lemon juice in a bowl, set aside. Warm blueberries and sugar in a saucepan for 3 minutes, mashing. Stir in cornstarch mixture, cook for 2 more minutes until thickened. Set aside.
  • Preheat oven to 350°F (177°C).
  • Mix melted butter, sugar, vanilla extract, and salt in a bowl. Add flour and combine. Press dough into a 9-inch tart pan evenly.
  • Bake for 15 minutes until lightly browned. Poke holes in the crust with a fork.
  • Whisk filling ingredients together, pour into warm crust. Stir blueberry sauce and drop spoonfuls on top. Swirl together gently.
  • Bake for 17-19 minutes until center is set but slightly sticky. Avoid over-baking.
  • Cool tart on a rack, chill uncovered for at least 2 hours, up to 1 day. Cover if chilling longer.
  • Slice and serve with optional garnishes.
  • Refrigerate leftovers tightly for up to 1 week.

Notes

You can bake and chill the tart a day in advance. Filling must be on a warm crust. Baked tart can freeze for up to 3 months.
