Ingredients
  

For the Potato Skins

  • 4 pieces Russet Potatoes Yukon Gold can be used for buttery flavor.
  • 2 tablespoons Olive Oil Can substitute with melted butter or avocado oil.

For the Toppings

  • 1 cup Cheddar Cheese Colby Jack or mozzarella can be used for variety.
  • 1 cup Sour Cream Can use Greek yogurt or dairy-free option.
  • ¼ cup Green Onions Chives or red onion are great alternatives.

Optional Extras

  • ½ cup Cooked Bacon Bits Roasted veggies can be used for a vegetarian option.
  • ¼ cup Jalapeños Add black beans for extra protein.

How to Make Loaded Potato Skins

  • Preheat your oven to 400°F (200°C). Bake the whole scrubbed russet potatoes for approximately 60 minutes, or until they’re tender when pierced with a fork.
  • Once the potatoes have cooled slightly, carefully slice each in half lengthwise. Scoop out the insides, leaving about ¼ inch of potato attached to the skin. Brush the skins with olive oil for a crispy finish.
  • Arrange the scooped skins on a baking sheet. Return to the oven and bake for 10–15 minutes or until they are crispy and golden brown.
  • Remove the crispy skins from the oven. Generously fill each with shredded cheddar cheese and any desired toppings like jalapeños or black beans for that extra flavor.
  • Place the filled skins back in the oven for an additional 5–7 minutes until the cheese is melted and bubbly.
  • Once out of the oven, add a dollop of sour cream and sprinkle with chopped green onions before diving in!

Notes

Scoop sparingly to avoid cracks in the skins, and reheat in the oven for best results.
