Ingredients
  

Tortillas

  • 8 pieces flour tortillas or corn tortillas

Filling

  • 1 lb ground beef
  • 2 tablespoons taco seasoning
  • 0.25 cup water
  • 4 tablespoons enchilada sauce
  • 8 ounces refried beans (½ can)
  • 0.5 cup shredded cheese (cheddar, mozzarella or Mexican cheese blend)

Topping

  • 4 tablespoons enchilada sauce
  • 0.5 cup shredded cheese (cheddar, mozzarella or Mexican cheese blend)

Garnishes (optional)

  • 1 piece tomato (roma or beefsteak, seeds removed and diced)
  • 1 small red onion (diced)
  • 0.25 cup black olives
  • 0.25 cup sour cream
  • 2 pieces green onions (finely diced)

Instructions
 

Preparation

  • In a large frying pan or skillet on medium heat, add the ground beef and break it into small pieces as it cooks. Sauté for about 5-8 minutes or until cooked through. Remove grease from the pan.
  • Add taco seasoning, water, and enchilada sauce. Stir until combined and let simmer for 1-2 minutes.
  • Spread a layer of refried beans on one tortilla. Top with ground beef, add cheese, and place another tortilla on top.
  • Spread 1 tablespoon of enchilada sauce on top of the tortilla and cover with shredded cheese.
  • Repeat with remaining tortillas.

Cooking Methods

  • For Air Fryer: Preheat to 400°F, place one pizza at a time, and cook for about 5 minutes, or until cheese melts and tortillas are crispy.
  • For Oven: Preheat to 350°F, arrange pizzas on a lined sheet pan and bake for 8-10 minutes until cheese is melted.
  • For Pan Frying: In a pan, add oil, place one pizza, cover, and cook for 4-5 minutes until cheese melts and bottom tortilla is crispy.
  • Transfer pizzas to a serving plate and top with optional garnishes: tomatoes, red onion, olives, sour cream, and green onion.

Notes

This recipe can be adjusted to suit vegetarian diets by omitting the ground beef.
