Dry Ingredients

  • 2 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt

Wet Ingredients

  • 1 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup buttermilk

  • 2 cups peeled, cored, and diced apples (about 3 medium apples)

Baking Instructions

  • Preheat your oven to 350 degrees F. Grease and flour a 9×13 inch baking pan.
  • In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
  • In a large bowl, cream together the granulated sugar, brown sugar, and softened butter until light and fluffy.
  • Beat in the eggs one at a time, then mix in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, mixing just until combined. Do not overmix.
  • Gently fold in the diced apples and nuts, if using.
  • Spread the batter evenly into the prepared baking pan.
  • Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cake bakes, prepare the glaze.
  • In a small saucepan, melt ½ cup butter. Stir in 1 cup brown sugar and ¼ cup milk. Bring to a boil and cook for 1 minute, stirring constantly. Remove from heat and stir in 1 teaspoon vanilla extract.
  • Immediately pour the hot glaze evenly over the warm cake as soon as it comes out of the oven.
  • Let the cake cool in the pan before slicing and serving.

Notes

Use firm, slightly tart apples like Granny Smith for the best texture and flavor contrast. For a richer spice flavor, increase the cinnamon to 1 ½ teaspoons. The cake is best served warm or at room temperature.
