Ingredients
  

Potatoes

  • 3 pounds red potatoes rinsed and quartered

Oil and Butter

  • ¼ cup olive oil
  • 2 tablespoons unsalted butter melted

Flavorings

  • 8 cloves garlic finely minced
  • 1 cup parmesan cheese divided
  • 3 tablespoons fresh parsley chopped

Cooking Instructions

  • Preheat the oven to 400°.
  • Slice the red potatoes into quarters.
  • Add potatoes to a bowl with olive oil, garlic, ¾ cup parmesan cheese, salt, and pepper. Mix until combined.
  • Spread the potatoes out in a single layer, cut side down, and sprinkle on an additional ¼ cup of parmesan cheese. Bake for 25 to 30 minutes or until golden brown and tender.
  • Toss the cooked potatoes with melted butter and fresh parsley.

Notes

These are meant to be eaten within an hour of making them. Store covered in the refrigerator for up to 3 days. Reheat in the oven at 350° for 8 to 10 minutes until warmed and crispy.
