Ingredients
  

Rice and Broccoli

  • 1 ½ cups long-grain white rice such as basmati or jasmine
  • 1 teaspoon garlic salt
  • 1 crown broccoli about 10 ounces, cut into bite-sized florets and ½-inch chunks of stem

Cheese

  • 1 ½ cups shredded sharp cheddar cheese approximately 6 ounces
  • freshly ground black pepper to taste

Instructions
 

Cooking Steps

  • Rinse the rice in a fine mesh sieve under cold running water until the water runs mostly clear, then drain well.
  • Add the rinsed rice, 2 ¼ cups of cold water, and the garlic salt to a medium saucepan over medium-high heat. Once it simmers, cover and reduce the heat to low. Let it simmer for 10 minutes.
  • Remove the lid and scatter the broccoli on top of the rice. Cover again, increase heat to medium low, and cook for 5 more minutes.
  • Remove the pot from heat and let it sit covered for 5 minutes. Uncover and fluff rice gently with a fork before folding in 1 cup of cheese.
  • Scoop rice into bowls and top with remaining ½ cup of cheese and a few grinds of black pepper. Serve warm.

Notes

Refrigerate leftovers in a tight-lidded container for up to 3 days. To reheat, sprinkle ½ teaspoon of water over a serving and microwave for about 1 ½ minutes, or until hot.
