Dry Ingredients

  • 1.75 cups flour King Arthur all-purpose flour preferred
  • 0.5 teaspoon baking soda
  • 0.75 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 cup sugar
  • 0.5 cups walnuts roughly chopped into ¼-inch pieces
  • 0.5 teaspoon ground cinnamon

Wet Ingredients

  • 2.5 cups rhubarb sliced into ½-inch thick pieces
  • 0.5 cups avocado oil Chosen Foods preferred
  • 2 flax eggs prepared with 1 tablespoon ground flaxseed and 3 tablespoon water per egg

Instructions
 

Preparation

  • Preheat your oven to 350°F and grease your loaf pan with oil or spray and dust with flour. Prepare walnuts and rhubarb.
  • Cook sliced rhubarb in a pot over medium heat with a splash of water for 12-15 minutes, stirring occasionally, then set aside to cool.
  • In a bowl, whisk together dry ingredients: flour, baking soda, baking powder, salt, sugar, cinnamon, and chopped walnuts.
  • In a second bowl, mix avocado oil, prepared flax eggs, and cooked rhubarb until smooth.
  • Pour the wet mixture into the dry ingredients and fold gently until just combined. Pour into the prepared pan.
  • Bake in the oven for 50-60 minutes until a toothpick comes out with a few moist crumbs. Let cool in the pan for 30 minutes.
  • Loosen the bread with a knife and turn out onto a wire rack to cool completely before slicing.

Notes

Allowing the bread to cool after baking ensures the crumb structure sets appropriately.
